Kebab Kofta



These kebabs are rich with spices and they go well with bread or rice of just like that. Simply awesome!





Ingredients:
800g of lean minced lamb*
2 onions, finely chopped
15g of fresh mint leaves, finely chopped
15g of fresh coriander, finely chopped
1 tablespoon of ginger paste
1 tablespoon of chilli paste
2 teaspoon of ground cumin
2 teaspoon of ground coriander
2 teaspoon of paprika
1 teaspoon of cayenne pepper
Salt to taste

Method
  • Mix all the ingredients together and shapes into a patty. Leave it to marinate for at least an hour.
  • Heat the oil and grill the patties till it cooked.

*Alternatively, you may use minced chicken meat

Stuffed Burger


I was watching a show on TV and this restaurant was serving hamburger stuffed with cheese and I know I just have to give it a go and make my version. Sinful? Yes. Happy pills? Definitely!



Ingredient A:
  • 500g of minced beef
  • 1 tablespoon of Worcestershire Sauce
  • 1 teaspoon cajun seasoning
  • 1 tablespoon of paprika powder
  • A pinch of dried mixed herbs
  • Salt to taste
  • 1 tablespoon of corn flour


Ingredients for stuffing:
  • Shredded cheddar cheese
  • Shredded mozzarella cheese


Burger toppings:
  • Lettuce
  • Sliced tomatoes
  • Sliced onion
  • Mustard & chilli sauce/tomato ketchup
  • Burge buns


Method:
  • Mix Ingredient A together.
  • Take about less than a handful of Ingredient A and make it into a patty and flatten it. Add the cheddar cheese & mozzarella cheese onto the patty. Add on the Ingredient A and ensure that the cheese are properly sealed.


  • You may leave it about 30 minutes before your start grilling.
  • To grill, heat olive oil and your patty is ready for cooking.
  • Leave it for about 10 minutes before you turn it over to cook the other side.


Serving suggestions:
I like to give a little toast to my burger bun and spread it with a little bit of butter before I layer my burger, sliced tomatoes, lettuce, onions, tomato ketchup, chilli sauce, mustard and whatever that makes you happy. And not forgetting, chips to go along with your Stuffed Burger. Good Luck!

Mee Bakso

During one of my Hari Raya visitings, my husband’s cousin served us this delicious dish.



Ingredient A:
Pound the following ingredients into a paste
1 stalk of lemongrass
1.5cm knob of ginger
2 onions
3 cloves of garlic

Ingredient B:
1 pack of beefballs (contains about 30 beefballs)
1 litre of beef broth or 1 cube of beef stock
500g of yellow noodle – dip in boiling water for few minutes  before serving.
300g of bean sprout
A bunch of chye sim – chop them about 5 cm long and dip in boiling water for few minutes before serving.
Fried shallots for garnishing

Ingredients for the sauce:
Mix 5 birds’ eye chillis (5 stalks up to your liking and pound them) & sweet soya sauce together.


Method:
  • Fill about 2 litres of water into a pot and add in Ingredient A, beefballs, beef stock and mix them till the ingredients cooked/boiled.
  • Add in salt & pepper to taste.


Serving suggestion (individual serving):
  • Put the yellow noodle, chye sim, bean sprout into a soup bowl. Pour in the soup and beef balls into the bowl. Add in the sauce and garnish it with fried shallots.

Chicken & Beef Kebaboom

This is an awesome dish to whip out for that weekend BBQ. Definitely will be the hot favourite for the night!




Chicken Kebaboom
Ingredient A:
250g of chicken fillet – cut them into cubes
2 cloves of chopped garlic
2 tablespoon of tomato puree
1 tablespoon of demerara sugar
1/2 teaspoon of cumin powder
1/2 teaspoon of corriander powder
2 teaspoons of tobasco sauce
1 tablespoon of lemon juice

Ingredient B:
2 green capsicum – cut into
1 Onion – cut into large cubes
1 can of button mushrooms



Method:
Mix altogether Ingredient A & add salt to taste.
Thread chicken and Ingredients B alternatively onto the skewer sticks.
Marinate the chicken for at least an hour.
After the chicken has been marinated, lightly oil the grilling pan with olive oil and place the skewers.



Beef Kebaboom
Ingredient A:
500g of cubed beef
2 cloves of chopped garlic
1 tablespoon of demerara sugar
1 teaspoon of paprika powder
1 teaspoon of cajun powder
A dash of dried mixed herbs
1 tablespoon of lemon juice

Similar method as stated above.




Serving Suggestion:
Serve with tomato rice of grilled corn on a cob.

Minestrone Soup

I really like the light taste of this soup and it's so easy to make. Working mum, take note of this recipe. Its done in less than an hour.








Ingredient A:
1 teaspoon of olive oil
2 cloves of chopped garlic
½ onion – peeled and diced
3 stalks of celery -diced
1 carrot – peeled and diced
2 potatoes – peeled and diced
2 zucchinis - diced
1 tablespoon of coriander leaves
1 litre of chicken stock
½ a litre of water
2 tablespoon of tomato puree


Method:
Heat a pan and add in the olive oil and sauté garlic, onion & coriander leaves until fragrant.
Add tomato puree and pour in the chicken stock, water, celery, zucchinis, carrots and potatoes and bring to boil for about 30 mins


Serving Suggestion:
Serve hot with garlic bread or macaroni.

Chicken in a pocket

Easy to make, great for the soccer nights on weekends. You can try with the different sauces and spices you can find in your kitchen. It's amazing how chicken can blend in so well with different flavours.







Ingredient A:
200 g of skinless chicken fillet
1 tablespoon of paprika powder
½ tablespoon of cajun powder
1 tablespoon of extra virgin olive oil
A pinch of salt
Mix the above ingredients together and leave it to marinate for at least 30 mins.

Ingredient B:
1 onion – sliced
1 clove of garlic – finely chopped
½ teaspoon of mixed herbs
8 or 10 cherry tomatoes – cut into half
1 tablespoon of worcestershire sauce
Chilli sauce
Mayonnaise
Buttercup lettuce
4 Wholemeal pita pockets

Method for pita filling:
  • Grill marinated chicken and sprinkle the sliced onion on the chicken.
  • Once the chicken is cooked, remove the chicken from  the grilling pan and place it on a chopping board and chop the chicken into small pieces. Leave the onion in the grilling pan.
  • On the same grilling pan, add in 2 tablespoon of olive oil.
  • Once the oil is hot, add in the chopped garlic and cherry tomatoes.
  • Once the tomatoes are cooked, sprinkle the mixed herbs.
  • Add in the chicken back into the grilling pan and add worcestershire sauce and leave the chicken to absorb the flavours.


Serving Suggestion:
Spread some mayonnaise in the pita pocket, stuff in the buttercup lettuce and the chicken filling. For extra flavor, you can add chilli sauce in your pita.




Fried Lontong

An alternative way to eat those rice cakes. Simple yet irresistible, try it!








Fried Lontong 

Ingredients:
6 small packs of rice cakes – cut them into small cubes
300 g of minced beef
3 tablespoons of Homemade Chilli Paste
1 tablespoon of oyster sauce
1 tablespoon of sweet soya sauce
1/2 a cube of beef stock
3 tablespoons of fried shallots
2 eggs - beaten


Method:
  • Add in 3 tablespoons of cooking oil into the hot pan.
  • Add in the Homemade Chilli Paste and fry it till cooked.
  • Add in beef stock, oyster sauce, sweet soya sauce & salt to taste and a bit of water and let the spices cook together before adding the minced beef.
  • Leave the minced beef to cook.
  • Once the beef has cooked, add in the rice cakes. Mix them well.
  • Pour the beaten eggs all over the rice cake & mixed beef and let the eggs cook before stirring them altogether.
  • Lastly add in fried shallots and stir well.



Serving Suggestion:
You may sprinkle chopped spring onion for garnishing.
