Foul Medames

One of my favourite breakfast dishes but it's also a great dinner dish if you want something light for the night.





Ingredient A:
2 x 400g foul Medames / fava beans - Blend coarsely with some water.
250g of meat(Boil the meat till tender and put aside, do not throw meat stock).
1 teaspoon of coriander powder
1/2 teaspoon of cumin powder
1/2 teaspoon of fennel powder
3 tablespoon of olive oil
3 tablespoon of ghee oil
Baguette - toast


Ingredient B (Blend them to make a paste):
2 large onions
6 cloves garlic

For Garnishing:
2 onions - cubed
2 green chillies- sliced
4 small limes (halved)
4 sunny side up (use ghee oil to fry sunny side and put aside the ghee oil for later)

Method:

  • Heat up the pan and add 2 tablespoon of ghee oil & 2 tablespoon of olive oil. Saute Ingredient B till fragrant. 
  • Add in powdered spices (coriander, cumin & fennel).
  • Cook for a few minutes.
  • Add in cooked meat and stock and cook for 5 minutes.
  • Pour in blended beans and cook for 5 minutes.
  • Add salt and water (if necessary).

Serving Suggestion:

  • Serve foul medames in a deep plate/bowl and top it with sunny side egg and drizzle some ghee oil that was used to fry the sunny side.
  • Garnish with onion cubes, chillies and lime.
  • Dip your toasted baguette into your foul medames to make you go mmmm….
