Chicken in sweet soy sauce (Mum's)



This special one is from my Mum...love love this loads!

Ingredient A:
1.5kg whole chicken – cut into 8 – 10 parts, add a bit of salt & 1 tablespoon of turmeric powder, fry the chicken and put it aside.
1 onion – sliced in rings.
2 potatoes – cut in wedges, fried & put it aside
10 cherry tomatoes – cut into halves
2 tablespoon of peas
10 baby carrot – cut into halves
1 tablespoon of home made chilli paste
5 tablespoon of sweet soya sauce
½ teaspoon of vinegar

Ingredient B (blend them altogether into a paste):
3 onions
3 garlics
1-cm knob of ginger
1 cup of water

Method
  • Heat up the saucepan with 3 tablespoon of cooking oil and add Ingredient B once the oil is hot.
  • Add in Homemade Chilli Paste & a dash of black pepper.
  • Once the ingredients have simmered, add in sweet soya sauce & vinegar.
  • Add in the chicken and let the paste cook well with the chicken (for about 10-15 mins).
  • Add a bit of water (1/2 cup of water) and salt to taste.
  • Lastly, add in the onions, potatoes, baby carrots & cherry tomatoes.

*Serve this with hot white rice
